Fall Apple Relish

Apple Relish

Fall is on its way, and with it an abundance of apples. Rather than making the usual apple butter and apple pie why not try something a bit different. This is a sweet and savory relish that is great with chicken or pork, or great spread on crackers or toast.

Ingredients:

8 cups of bell peppers finely chopped
12 cups of Apples, chopped (choose from sweet apples such as gala, or for a tart relish try a granny smith or other type of pie apple)
1 teaspoon salt
1 teaspoon ground cloves
8 cups chopped onions
3 cups sugar
3 cups vinegar

Instructions

Chop all vegetables and combine in a large stock pot or canning kettle. Combine the sugar, vinegar, cloves, and salt, and stir into the apples and vegetables in the pot. Bring to a boil and reduce heat. Simmer mixture for 40 minutes or until it thickens and is cooked through. Pour into sterilized hot pint jars and over with sterilized lids and rings. Put in a water bath canner and process at a full boil for 10 minutes. Makes 8 pints.
