Crockpot Recipe Favorites

Today is a super busy day at my house, so I thought I would leave you with some old favorites. I hope you enjoy!!

~Crockbot Beef Pot Roast~


1-1/2 to 2-lb. roast
1 dry pkg. Good Seasons garlic dressing
1 dry pkg. Italian or Zesty Italian dressing
1 can of beer (not dark)

Place one envelope of dressing mix in bottom of crock pot. Place meat on top and
sprinkle other dressing mix on top. Pour beer over all. Let cook 8-10 hours on
low. **NOTES: The beer breaks down the meat, so you can use cheaper cuts and it
will still turn out tender. To make gravy, take out the meat when it is done and
keep it warm; then add 4-5 tbsp. flour and 2 tbsp. butter, stir into the juices
well, and cook on High in the crock for 10 minutes. Yum. The meat freezes well
in its gravy.

~French Onion Soup~


1 quart beef bouillon or brown stock
2 med. yellow onions, thinly sliced
3 tbsp. butter
1/2 tsp. salt
1 tbsp sugar
2 tbsp flour
1/4 cup dry vermouth or cognac (optional)
1 cup grated Parmesan cheese

Pour stock into crockpot. Cook onionc slowly in butter (about 15 minutes) in
large covered skillet, stirring occasionally. Uncover and add salt, sugar, flour
and vermouth. Stir well. Add to stock in crockpot. Cover and cook on low 6-8
hours or high for 3 hours. Before serving, top with cheese.

~Crockpot Ham and Scalloped Potatoes~


6-8 slices ham
8-10 medium potatoes, peeled and thinly sliced
2 onions, peeled and thinly sliced
1 cup grated cheddar or American cheese
1 10-oz. can cream of celery or mushroom soup
paprika (optional)

Put half of ham, potatoes, and onions in crock pot. Sprinkle with salt and
pepper, then grated cheese. Repeat with remaining half of ham, potatoes, onions
and cheese. Spoon undiluted soup over top. Sprinkle with paprika. Cover and cook
on low 8-10 hours or high 4 hours. **NOTE: You can use reduced-fat soup and
cheese to cut down on calories and fat, but if you do, leave the salt out of the
recipe as the reduced-fat soups make the dish taste saltier.

~Cheesy Crockpot Chicken~


2 pounds boneless, skinless chicken breasts
2 cans condensed cream of chicken soup
1 can condensed cheddar cheese soup
1/4 tsp. garlic powder (I use more to taste)

Place chicken breasts in crock pot. Mix the undiluted soups together with the
garlic powder and pour over chicken. Cover and cook on low 6-8 hours until
chicken is tender. Serve with sauce over rice or noodles. NOTE: This freezes
well in its sauce.

~Chicken Taco Filling~


1 packet taco seasoning (or 4 tbsp. bulk seasoning)
1 cup chicken broth
1 pound boneless skinless chicken breasts

Dissolve seasoning into the broth. Place chicken breasts in crockpot and pour
chicken broth over. Cover and cook on low 6-8 hours. With two forks, shred the
chicken into bite-sized pieces. Use in soft or hard tacos, burritos, nachos,
etc. **NOTE: This can be frozen, in its own juices, in plastic freezer bags.

~Crockpot Smoked Sausage~
1 lb. smoked sausage
15-oz. can Hunts Ready Sauce (Italian)
(if you can’t find this brand, use prepared spaghetti sauce)

Cut sausage into 1/2 inch slices and place in crockpot. Pour sauce over, cover
and cook on low 6 hours. Serve over hot rice.

~Cola Chicken~


1 cup cola (Coke, Pepsi, whatever)
1 cup catsup
1 large onion, sliced
1-1/2 pounds whole chicken

Wash and dry chicken. Salt and pepper to taste. Put chicken in crockpot and
place onions and top. Add cola and catsup and cook on low 6-8 hours. When
cooked, place in the fridge to cool and then skim off the fat. Reheat and eat.

~Kahlua Chicken~


3 pounds boneless skinless chicken thighs
2 tbsp. salt
1/2 bottle liquid smoke

Combine all in crockpot. Let cook for about 10 hours on low. Shred and enjoy
over rice.

~Aztec Black Beans~
1 pound dried black beans
16 oz. jar salsa (your favorite)

Rinse beans, removing any foreign objects. Place in a large bowl and cover with
water, allowing them to soak at room temperature overnight.

Drain beans and place in a crockpot with the salsa. Stir, and add enough water
to just cover the beans. Cover and cook on low all day, 8-10 hours. This freezes
well.
